Cowpea Beans, known for its unique texture and bold flavor, is an excellent source of protein and fiber, making for nutritious and tasty meals. Widely used in regional Brazilian cuisine, especially in the Northeast, it is essential for traditional dishes like baião de dois. Its versatility allows for a variety of preparations, contributing to a diverse and healthy diet.
Recipe:
Cowpea Beans Vinaigrette
– Ingredients:
1 cup of feijão de corda (cowpea)
1 red onion
½ yellow bell pepper
2 tomatoes
¼ cup of olive oil
Juice of 1 lemon
2 tablespoons of white wine vinegar
¼ cup of fresh cilantro leaves
Salt and freshly ground black pepper to taste
– Preparation:
Place the beans in a pressure cooker and cover with 4 cups of water. Close the lid and cook over high heat. Once it starts to whistle, lower the heat and cook for 10 minutes. Meanwhile, prepare the vinaigrette.
Peel and finely dice the red onion. Remove the seeds and dice the yellow bell pepper. Wash, dry, and halve the tomatoes; discard the seeds and dice each half. Wash, dry, and finely chop the cilantro leaves. Transfer all chopped vegetables to a large bowl and set aside.
Turn off the heat and—important—wait until all the pressure has been released before opening the cooker. Drain the beans using a sieve and rinse under cold water to stop the cooking process. Drain well.
Add the beans to the chopped vegetables, season with olive oil, vinegar, lemon juice, salt, and pepper to taste. Gently mix and serve, garnished with whole cilantro leaves if desired.
