Widely consumed in Pará, a state in northern Brazil, flaked (or granulated) tapioca flour is different from the ready-to-use tapioca dough that is more common and easily found in markets across the country. The ready-to-use dough contains starch gum and is usually hydrated and sifted, ideal for making flat disks to be filled. The flaked version, on the other hand, is sifted in a heated pan and stirred until it “pops,” similar to popcorn, resulting in a texture like styrofoam flakes.
