Its versatility allows for a variety of preparations, contributing to a diverse and healthy diet.
Recipe:
Cowpea Bean Vinaigrette
Ingredients:
1 cup cowpea beans (feijão de corda)
1 red onion
½ yellow bell pepper
2 tomatoes
¼ cup olive oil
Juice of 1 lime
2 tablespoons white wine vinegar
¼ cup chopped cilantro leaves
Salt and freshly ground black pepper to taste
Instructions:
Place the beans in a pressure cooker and cover with 4 cups of water. Close the lid and cook over high heat. Once it starts to whistle, lower the heat and cook for 10 minutes. Meanwhile, prepare the vinaigrette.
Peel and dice the red onion. Remove seeds from the bell pepper and dice it. Wash, dry, and halve the tomatoes; remove the seeds and dice. Wash, dry, and finely chop the cilantro leaves. Transfer all chopped ingredients to a large bowl and set aside.
Turn off the heat and wait for all the pressure to release before opening the cooker. Drain the beans in a colander and rinse under cold water to stop the cooking process. Drain well.
Add the beans to the chopped vegetables, season with olive oil, vinegar, lime juice, salt, and pepper. Mix gently and serve, garnished with whole cilantro leaves if desired.
